Chocolate Zucchini Muffins with Thrive

Ingredients

  • 1 ¼ cup gluten free flour
  • 1 scoop Kissed Earth Thrive Super Duper Choc Multi Shake
  • 1 tbsp cacao
  • 1/3 cup coconut oil
  • ¼ cup maple syrup
  • 1/3 cup milk
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • 1 cup grated zucchini
  • ½ cup chocolate chips

Method

  1. Preheat oven to 180C and line a muffin tin with liners.
  2. In bowl whisk together eggs, coconut oil, and maple syrup.
  3. In a separate bowl combine flour, protein, cacao, baking soda and salt.
  4. Add dry ingredients to wet and gently combine.
  5. Fold through the zucchini and then chocolate chips.
  6. Scoop batter into muffin liners.
  7. Bake for 20 minutes.
