Rice Paper Rolls with Brilliance Pineapple Coconut

Rice paper rolls with a sweet and spicy pineapple coconut dipping sauce. A fresh and colourful meal full of brilliance. (GF | DF | RSF)

Makes 10

Ingredients

  • 10 rice paper sheets 
  • 2 salmon fillets cubed
  • 1/2 purple cabbage chopped
  • 2 carrots julienne
  • 1/2 cucumber thinly sliced  
  • 1 avocado sliced
  • 1 capsicum thinly sliced 
  • 1/2 cup cooked rice 

Spicy Pineapple Coconut Dipping Sauce 

  • 2 tbsp fish sauce 
  • 2 tsp rice wine vinegar 
  • 1 tbsp maple syrup 
  • 1/2- 1 tsp chilli flakes  
  • 2 sachets Brilliance Pineapple Coconut collagen 

Sweet Chilli Pineapple Coconut Dipping Sauce 

  • 3 tbsp rice wine vinegar
  • 1/4 cup water 
  • 1 tbsp coconut aminos
  • 1/2 tsp chilli flakes 
  • 2 tbsp maple syrup 
  • 1 garlic clove minced 
  • 1 1/2 tbsp cornstarch 
  • 2 sachets Brilliance Pineapple Coconut collagen 
  • 2 tbsp water 

Method

  1. Prepare spicy pineapple sauce by combining all ingredients in a small jar and whisking together
  2. Transfer to a serving dish 
  3. Prepare sweet chilli pineapple sauce by first combining cornstarch, pineapple and coconut sachets with 2 tbsp water in a small jar and let sit for 5 minutes
  4. In a saucepan, over low heat, combine rice wine vinegar, water, coconut aminos, maple, garlic, and chilli
  5. Pour in cornstarch and collagen mixture and continue stirring for 2-5 minutes. The sauce will gradually become thicker
  6. Remove from heat and place in a serving dish
  7. Prepare rice paper rolls by pan frying salmon until crispy
  8. Dip rice paper into water as per packet instructions
  9. Add vegetables, and roll carefully, folding in the sides as you go
  10. Repeat

Dip rice paper rolls into your sauces and enjoy!
