Equipment Needed

Ingredients

  • 1 1/2 cup almond meal
  • 1/2 cup macadamia nuts
  • 1/3 cup desiccated coconut
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil
  • 1/4 tsp vanilla bean
  • 2 sachets Kissed Earth Luminous Collagen
  • 10 raspberries (frozen)
  • Melted chocolate
  • 1/2 cup desiccated coconut for rolling

Method

  1. In a food processor combine almond meal, macadamia nuts, coconut, maple syrup, coconut oil, vanilla bean, and luminous collagen
  2. Blend until combined
  3. Take a tablespoon of mixture, flatten gently and place a frozen raspberry in the centre
  4. Fold over mixture and roll into a ball
  5. Repeat to make 10 bites
  6. Melt chocolate and dip each ball into the chocolate and then transfer to desiccated coconut
  7. Repeat for all bites
  8. Place in fridge for 30 minutes to set and enjoy!
