A green soup made goddess by adding Brilliance Collagen powder to the mix. It aids in making you feel good and GLOW from the inside and out!
1. Heat oil in a saucepan. Add the onion and sautée until golden. Add the garlic and leek and continue to cook until fragrant
2. Add the remainder of the vegetables to the saucepan. Cook for 5 mins then add the vegetable stock. Simmer for 20 minutes
3. Add the silken tofu, coriander and collagen powder to a food processor, and blitz until smooth.
4. Once the stewed vegetables have cooled slightly. Add the vegetables to the food processor (careful not to add too much liquid- I like my soup thick!) and blitz until smooth
5. Serve with some extra coriander and chilli oil for garnish, and enjoy with crusty bread!
