Tofu Macro Bowl

Ingredients

  • 350g Hi-Protein Firm tofu, drained and pressed
  • 2 tbsp white miso paste
  • 1 tbsp rice wine vinegar
  • 1 tbsp maple
  • 2 tsp sesame oil
  • 1 tbsp water 
  • Brown rice
  • Cucumber
  • Radish
  • Avocado
  • Purple Cabbage 
  • Avocado
  • Hemp seeds

Method

  1. Preheat oven to 180C and line a baking tray with baking paper.
  2. Cook rice as per instructions. 
  3. Cut the pressed tofu into cubes and transfer to baking tray. 
  4. Bake for 20 minutes, turning halfway through.
  5. Prepare tofu marinade by combining white miso paste, rice wine vinegar, maple, sesame oil and water together.  
  6. Remove from oven and coat the baked tofu in 3/4 of the marinade.
  7. Return to oven and bake for 10 more minutes until browned.
  8. Prepare veggies and add to serving bowl.
  9. Add cooked tofu to veggies and drizzle with remaining marinade sauce.
