Gingerbread with Brilliance

Ingredients

  • 1 1/2 cup bobs red mill gluten free flour 
  • 2 sachets Kissed Earth Brilliance Unflavoured collagen 
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda 
  • 1/2 tsp salt 
  • 1 tbsp ground ginger 
  • 2 tsp cinnamon 
  • 1/2 tsp ground cloves 
  • 1/2 tsp cardamon 
  • 1 tbsp coconut sugar 
  • 1/4 cup molasses 
  • 1/3 cup apple purée 
  • 4 tbsp coconut oil 

Method

  1. Preheat oven to 150 C 
  2. Line a baking tray with baking paper
  3. In a large mixing bowl, and add dry ingredients. Stir to combine
  4. Make a well in the center and add wet ingredients
  5. Fold ingredients together until a dough texture forms
  6. Transfer to a lined baking paper surface
  7. Sprinkle a pinch of flour on to baking paper
  8. Roll out dough with rolling pin and cut out gingerbread with cookie cutters
  9. Repeat process to use up all the dough for gingerbread
  10. Transfer to baking tray
  11. Cook in oven for 10 minutes.
  12. Let cool and decorate.
