Divine Chickpea Curry
Method
  1. In a large pan, heat olive oil over medium heat. Add onion and garlic and sauté for 5 minutes
  2. Pour in the chickpeas, coconut milk, crushed tomatoes and spices
  3. Add 1/4 cup of water to mixture
  4. Let simmer for 20 minutes, stirring occasionally
  5. Serve with rice, lime wedges and coriander.
