Brain Elixir Bean Burrito

Equipment Needed

Ingredients

  • 2 large tortilla wrap
  • 400g tin black beans, top of liquid drained
  • 1 cup liquid vegetable stock
  • 3 tsps Kissed Earth Brain Elixir
  • 1/2 cup brown rice 
  • 1 cup purple cabbage, chopped
  • 1 cup cos lettuce, chopped 
  • 1 tomato, diced
  • 1/4 red onion, sliced  
  • 1/2 avocado, mashed 
  • 1 lime 
  • 2 tbsp coriander, sliced 
  • Chipotle

Method
  1. Cook rice as per instructions
  2. Add blackbeans to a heated fry pan with vegetable stock, Brain Elixir, and a sprinkle of salt. Simmer for 25 minutes or until reduced
  3. In a small bowl add 1/2 a lime to mashed avocado
  4. In a separate bowl add diced tomato, coriander and red onion 
  5. Set tortilla on a large square of foil and spread chipotle of choice down the centre
  6. Add cooked rice and bean mixture down the centre, then top with cos lettuce, cabbage and tomato mix, and mashed avocado
  7. Fold burritos by folding in the sides, then carefully folding the end nearest to you over the filling, and roll until secure
  8. Fold the burrito towards you in the foil and roll tightly
  9. Add to a heated sandwich press to toast
  10. Slice in half and enjoy!
