Deliciously divine mini sticky date puddings with brilliance collagen. (GF | DF | RSF) Makes 6
Ingredients
1 cup gluten free flour
1 tbsp chia seeds
1 tsp baking powder
1 tsp baking soda
2 tsp vanilla bean
1 tsp cinnamon
4 sachets Kissed Earth Brilliance collagen
1/2 tsp salt
1 cup coconut milk
6 medjool dates
1/4 cup olive oil
1 tbsp maple syrup
1 cup canned coconut milk
1/2 cup coconut sugar
2 tbsp coconut oil
Method
Preheat oven to 180 C
In a mixing bowl combine, flour, chia seeds, baking powder and soda, 1 tsp vanilla bean, cinnamon, salt and 2 sachets of brilliance collagen
Prepare wet mixture by combing pitted medjool dates, olive oil, maple syrup and 1 cup coconut milk in a blender
Pour wet mixture into dry mixture and stir gently to combine
Transfer to a silicone muffin pan and bake for 20-25 minutes
Prepare sticky date sauce by combining 1 cup canned coconut milk, coconut sugar, coconut oil, 1 tsp vanilla bean and 2 sachets of brilliance collagen in a saucepan over medium heat
Bring to a boil and then stir on a low heat for 10-15 minutes
Sauce will continue to thicken once removed from heat
