Magic 8 Veggie Stack
Method
  1. Preheat oven to 180C
  2. Slice sweet potato, eggplant and zucchini and transfer to a baking tray
  3. Drizzle with olive oil, salt and pepper
  4. Cook for 20 minutes
  5. Let veggies cool
  6. While veggies are cooling prepare pesto by combining basil, walnuts, nutritional yeast, garlic powder, Magic 8, olive oil, salt and pepper in a food processor
  7. Begin to stack veggies by placing eggplant down, topped with zucchini, sweet potato, pesto sauce, tomato slices, cheese and top with mushrooms.
  8. Return to oven for 30 minutes
  9. Let cool and enjoy!
