Crispy Salmon Macro Bowl

Ingredients

  • Salmon 
  • 1 egg
  • 1 cup gluten free breadcrumbs 
  • 2 tsp paprika 
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Brown rice
  • Cucumber
  • Edamame beans
  • Avocado
  • Purple Cabbage 
  • Mixed herbs and micro greens 
  • Radish
  • Spring onion  
  • Avocado
  • Sesame seeds 

Sweet Chili Mayo: 

  • 1 tbsp Sweet Chili Sauce Coconut Aminos (niulife)  
  • 2 tbsp mayo or yoghurt 

Method

  1. Cook rice as per instructions. 
  2. Cut the salmon into bite size pieces.
  3. In a bowl add breadcrumbs.
  4. In a separate small bowl whisk one egg.
  5. Add salmon pieces to egg then coat in breadcrumbs.
  6. Transfer to air fryer. Cook for 12-15 minutes at 200C.
  7. Prepare veggies.
  8. Create sweet chili mayo sauce by adding sweet chili coconut amino with 2 tbsp mayo or yoghurt.
  9. Add crispy salmon to bowl with veggies, and drizzle over sweet chili mayo.
