Creamy Broccoli Soup with Magic 8

Equipment Needed

Ingredients

  • 1 tbsp olive oil
  • 1 leek, sliced 
  • 1 large head of broccoli
  • 1/2 head cauliflower 
  • 1 zucchini, sliced   
  • 1 cup spinach 
  • 1L vegetable stock
  • 1 tin butterbeans 
  • 2 tbsp nutritional yeast
  • 2 tbsp Kissed Earth Magic 8
  • 1 tsp garlic salt
  • 1/2 cup coconut milk, tinned 
  • Salt and Pepper to taste 
  • Chives and basil to serve

Method

  1. Preheat oven to 180C and line a baking tray with baking paper.
  2. Add broccoli, cauliflower, leek and zucchini. Drizzle with olive oil. 
  3. Roast for 30 minutes until vegetables are softened.
  4. Once softened transfer to a large pot and add 1 cup spinach and butter beans with vegetable stock. 
  5. Bring to a boil. 
  6. Add nutritional yeast and stir. 
  7. Using a stick blender, mix until combined. 
  8. Add Kissed Earth Magic 8 powder, garlic salt, coconut milk and salt and pepper. 
  9. Stir until combined.
  10. Transfer to a serving bowl and top with fresh chives, basil and dukkah.
